There are days that demand comfort food. I’m having a lot of those days lately.

Chocolate Pudding (6 Servings)

1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/4 cup cornstarch
pinch salt
2 3/4 cups milk
1/2 tsp vanilla extract

Sift dry ingredients into a saucepan. Stir in milk over medium high heat. Stir constantly until mixture bubbles and thickens enough to coat the spoon. Remove from heat and blend in vanilla. Serve warm or chill. Garnish with grated chocolate if desired.

Tip: Stirring the pudding occasionally as it cools will prevent it from forming a skin. There’s no need to cover it with plastic wrap or waxed paper.
