Growing up, we had spaghetti made one of two ways, tomato sauce with ground beef and tomato sauce with sliced linked sausages. Mom never made meatballs, and, frankly, I don’t blame her. I have been hard core craving sausage and spaghetti lately. I usually have a stash of homemade sauce in the freezer, but I’d been holding on making a new batch until my tomatoes came in. Well, I don’t think they are coming. Remembering Jennie had made a tasty sounding tomato sauce recently, I decided to pull out some canned tomatoes and get to work on my week 7 entry. Clearly, it wasn’t a salad.
I cooked down the tomatoes a bit after adding them, to get a more saucy consistency, but otherwise stuck to the recipe as presented.
The rest of the dish played out like this…
I sliced the smoked sausage link and put in an iron skillet with water almost to cover. I cooked off the water, letting the sausage develop some color. I removed the sausage and deglazed the pan with a bit of water. Next I added some oil and fried bell pepper strips (onions are yummy too) until they were a bit floppy and caramelized. Back in went the sausage. Oh, during this process is a good time to cook the pasta.
I layered everything up and added some Parm.
Not quite Mom’s, but not bad.

It was easy, tasted good, and I’d make it again!
Here, let me give you a variation to that:
Instead of boiling the sausages and lose a bit of flavor there, quick-grill them in a very hot pan with some oil. Using the same oil, caramelize the onions then add in around a dash or two of vinegar – It gives the caramelized onions something to think about
Try getting bratwurst sausages. They are good.
Oh and… It’s better to fine-grate the cheese.. Unless your pasta and sauces are really hot.

i used to add italian sausage to my spaghetti all the time and then for some reason i got so tired of it.
i am still craving meatballs dang it.
and i am having spaghetti tonight…
