I looked at various recipes on the web and threw this together with what I had on hand. This was a satisfying attempt that would be easy to modify. Great for those days you don’t want to think about heating up the kitchen.
Mixed tomatoes
Sweet bell peppers
Cucumber
Sweet red onion
Basil
Ciabatta
Garlic
Red wine vinegar
Olive oil
Sea salt
Ground black pepper
Chop veggies into bite size pieces. Chop or tear basil. Rub bread with garlic. Cube bread into bite size pieces. Combine all and dress with a splash of vinegar and a bit of oil (about 1 part vinegar to 3 parts oil). Add salt and pepper. Toss. Let stand about thirty minutes. Enjoy!

Yes. I would put more bread in it next time, though. I knew I was going to be short. I think up to a third of this could be bread cubes, and I’d be happy.
I served mine on a bed of spring mix (not necessarily recommended) with local fruit, milk, and cheese.


I can’t do croutons in salads, so I think panzanella is out for me. But it is so colorful and fresh! Got to love that.
